Diner home fries are one of America's great breakfast institutions, and also one of its great lies: the version most of us make at home involves twenty minutes of standing over a cast-iron skillet, flipping, swearing, and producing potatoes that are somehow both greasy and pale. The short-order cook has a flat-top the size of a door and decades of wrist memory. You have a Tuesday morning and a kid asking where breakfast is.

This is the job the air fryer was built for. Cubed potatoes, a slick of olive oil, smoked paprika for that faint bacon-adjacent depth, and hot circulating air doing the flipping for you. Twenty minutes, one hard shake in the middle, and you get cubes with genuinely crisp edges and creamy centers — closer to deep-fried than any skillet version we've managed without using three times the oil. The honest caveat: a 5.8-quart basket holds about a pound and a half in a workable layer. Pile in more and you're steaming potatoes, not roasting them. For a crowd, cook in two rounds and hold the first in a low oven.

Yukon Golds are our pick — thin skins, buttery flesh, and they crisp without the soaking-and-drying ritual russets demand. And because this is nothing but potatoes, oil, and spices, it's naturally vegan and safe across all nine major allergens — a breakfast side everyone at the table can eat without anyone reading a label twice.

We cook these in the Cosori 5.8-quart we test everything in — the square basket fits a true single layer better than most round ones.

Ingredients

Serves
4
  • 1½ lbYukon Gold potatoes (cut into 3/4-inch cubes, skin on)
  • 1½ tbspolive oil
  • 1 tspsmoked paprika
  • ½ tspgarlic powder
  • ½ tsponion powder
  • ¾ tspfine sea salt
  • ¼ tspblack pepper
  • 2 tbspfresh parsley (chopped, to finish)

Method

  1. 01

Cut the potatoes into 3/4-inch cubes — keep them even, because ragged sizes mean some cubes burn while others stay chalky. No need to peel; the skin is where the crunch lives.

  2. 02

Toss the cubes in a big bowl with the olive oil, paprika, garlic powder, onion powder, salt, and pepper until every face is slicked and rust-colored.

  3. 03

Tip them into the basket in as close to a single layer as you can manage. A little crowding is fine; a heap is not.

  4. 04

Air fry at 400°F for 20 minutes, shaking the basket hard at the 10-minute mark. They're done when the edges are deep golden and a fork slides in without argument — air fryers run hot, so peek at 16 minutes the first time.

  5. 05

Taste one, add salt if it needs it, shower with parsley, and serve hot — they lose their crackle as they sit.

Common questions

How long do you cook breakfast potatoes in the air fryer?
Air fry the 3/4-inch cubes at 400°F for 20 minutes, shaking the basket hard at the 10-minute mark. Air fryers run hot, so peek at 16 minutes the first time — they're done when edges are deep golden and a fork slides in easily.
Why are my air fryer breakfast potatoes soggy instead of crispy?
Usually it's overcrowding. A 5.8-quart basket holds about a pound and a half in a workable layer; pile in more and you steam the potatoes instead of roasting them. Cook a crowd in two rounds.
Do you need to peel the potatoes or soak them first?
No on both — Yukon Golds have thin skins where the crunch lives, so leave them on, and they crisp without the soaking-and-drying ritual russets need. Just cut even 3/4-inch cubes so nothing burns or stays chalky.
Do you have to shake the basket for air fryer breakfast potatoes?
Yes — give the basket one hard shake at the 10-minute mark so the cubes brown on all sides rather than crisping on just one face.
